Crossbows can be made from wood or metal. Hunters do use them and they can be assigned to your military. Ammunition dor crossbows are bolts.
There are reports that soldiers using crossbows is buggy currently, including problems with equipping bolts, practising at archery targets and going into melee instead of shooting in actual batlle.
