A quern is a single-square workshop used to grind certain plants into sugar, flour, dye, and slurry. Each milling job requires an empty bag, as the process will also produce seeds from plants being milled. Unlike a millstone, the quern is powered by the dwarf using it to perform the labor. A quern must be created at a Mason's workshop before it can be built as a workshop.

The quern may also be used to mill seeds/nuts to paste.

Ensuring the exclusive milling of certain plants (to, say, produce only dye, not flour) is cumbersome. It requires a stockpile that only allows these plants and setting it to q-'give To A Pile/Workshop', as the quern provides no menu to specify what to mill. You also need a furniture stockpile that allows only bags (deactivate wood, stone and metal as material to avoid it being cluttered with coffers,) setting that to 'giving' to the quern too. It doesn't need to be two separate stockpiles, as the custom menu does allow item commingling.

If you don't set custom stockpile(s), the miller will pick the closest random plant and bag, with the usual, occasionally surprising definition of closest. Additionally, you have to ensure somehow that the plants arrive at the right stockpile, for example by not allowing them on any other. Once you got this working, repeat for every other plant you want to mill, either switching the 'give' orders every time or setting up a separate quern for every plant combination.

For general details read Giving to a Stockpile/Workshop.

Alternatively, to preserve what little sanity a DF player has left, just forbid all millable plants you don't want milled (for example from the stocks menu) and (re-)claim them once the milling job is done.

As another alternative, the utility DFHack provides a "job item-material" command that allows you to specify a plant to mill.

av

A Vermin Catcher's Shop, previously called Kennel, is a large 5×5 workshop. To build a Vermin Catcher's you need one building material (wood, stone, metal bar) and a dwarf who has the animal training, small animal dissection and/or trapping skills enabled. Note that the labor associated with the skill "small animal dissection" is used solely at a butcher's shop (namely "Extract from a dead animal").

Vermin Catcher's Shop allow the capturing of small animals (vermin) with an animal trap, like a butcher's shop. The Vermin Catcher's Shop also allow animal trainers to tame these small animals.

Vermin Catcher's Shop tasks
Capture a live land animal
Requires: An animal trap and a trapper.

This task directs the trapper to attempt to capture vermin with the animal trap. The trapper will carry the animal trap around the fortress, chasing actual vermin creatures that exist in the fortress but are not rendered on the screen, and will catch one once it reaches it. Once the vermin creature is successfully caught, the trap will be dropped, and then hauled to an animal stockpile by anyone with the animal hauling labour. Any animal caught in a trap will be identified as "live": for example, a "live rat", a "live rhino lizard", or a "live caphopper". These animals can be eaten by any dwarves as a delicacy, or can be tamed for adoption using the task below.

Note that GNAWER vermin will quickly escape from non-artifact wooden animal traps after being caught, and also note that there is no way to enforce using only non-wooden traps to catch gnawers, other than ensuring that they are the only traps available. Wooden animal traps do work fine for non-gnawing vermin.

Tame a small animal
Requires: An animal trainer and trapped "live" vermin.

This task is used to tame caged vermin for adoption as pets; if a live vermin is not tamed as a pet, it may eventually be eaten by a dwarf as a form of exotic cuisine (even things that would make most people cringe, such as hamsters, lizards, and worms or, unfortunately enough, fairies or pixies). Vermin can only be tamed if they are in an animal trap and not a cage. If a vermin you want to train is in a cage, it can be unassigned from the cage, and a recapture task to put it back into an animal trap will be generated automatically.
}}av

The still is the source of all home-made alcohol for a fort and is an essential workshop for any fortress. A still also allows dwarves to extract gnomeblight from kobold bulbs into a glass vial. A dwarf must have the brewer labor activated in order to use a still.

The four tasks available at a still are:
* e Extract from Plants
* b Brew drink from plant
* f Brew drink from fruit
* m Make mead

Brewing alcohol requires an available empty barrel or large pot and something to brew, either a brewable plant, fruit, or honey. You may set specific plants and fruits to be used or not used through the Status menu under Kitchen. (z-k) Note that you are unable to set honey bee honey to be brewed or not brewed, because making mead is a different task than brewing.

Every unit of plant, fruit, or honey brewed at a still produces 5 units of alcohol. A single stack of plants will be brewed for each task, and the resulting booze will be placed into a single barrel - a stack of Plump helmet [5] will produce Dwarven wine [25] and will only occupy a single barrel. Skilled growers, who tend to plant seeds more skillfully and produce larger stacks, can therefore reduce the number of barrels required to store alcohol, which in turn minimizes the required stockpile size. Brewing produces seeds from ingredients that have seeds if the number of those seeds in the fortress is less than the per-plant limit of 200 (this number can be modified in the d_init.txt file).
