Water that will never run out (IE. water features you can see on the region map) Opening the fortress to the wrath of these monsters is generally considered a Bad Idea.[Verify]
Ponds/lakes on the fortress map are limited in volume, but are rumored to refill when it rains as they dry out in hot weather. I have yet to observe this, having one map that was hot enough and lacked rain, and the second with rain wasn't hot enough.
