Sourced water is water that will never run out (i.e., water features you can see on the region map). These include "river sources". It is possible to completely flood your fortress if you tap into these without building controls such as floodgates.

Ponds and lakes on the fortress map are limited in volume, and do not yet refill when it rains, though it is believed this functionality will be introduced in a later version. They will often dry out in hot weather.
