Cats will automatically attack and kill any vermin they come across, your refuse-haulers will have to dispose of the corpses before they rot. Rotting vermin-corpses generate miasma, which dwarves generally hate. Vermin that get into food stores will eat some food, this can be a problem if there are no cats in your fortress.
