As noted in tree farm, trees take a long time to grow, although trees in Dwarf Fortress still grow much more quickly than in real life.

Historically (when the real world was at about the tech level used by characters in Dwarf Fortress) wood for purposes including charcoal-making was produced with a technique called "coppicing." Wikipedia has an article on the subject: [1]

Coppicing, if implemented, is likely to come during or after deliberate planting of trees. Both produce a wood source at a controllable location and predictable time.
