Gypsum plaster is listed under "stones" but you don't need to have this selected (as it normally only appears in-game inside of bags).
It should be noted that even with a stockpile of plaster bags right in the middle of your hospital zone, the hospital info page still lists that none is present. Obviously it should be automatically stored inside containers like cloth, thread, crutches and splints are but this is bugged.v0.31.13
