This plant seems to currently be bugged. None of your Dwarves with the Plant Gathering labor enabled will collect it when it is part of a "Gather Plants" designation or a Plant Gathering zone, and thus there seems to be no way to harvest it, similar to cowpeas and several other plants in the current version.
Also, in real life, groundnut can be ground into a flour, although this is not part of the base game (it *is* part of the Extended Plants mod). Probably also worth mentioning on the main page.
