A gizzard is an organ found in many birds, such as the albatross. When butchered, it becomes a "prepared <creature> gizzard", which is an edible organ that can be eaten exactly like meat or other bodily organs. They have similar size to many other bodily organs, such as the brain or the liver.
Gizzard stones can also refer to the extra random-material gemstones obtained from butchering several birds, such as ostriches. Although in real life these stones can be located in the gizzard, they do not actually exist in creatures in Dwarf Fortress until they are butchered.
