Peasants

If a dwarf has no skills, they have no profession, and are listed as "peasant" on the screen of creatures on the game map ( u ). By default they are shown as light blue, a color (almost?) identical to that of craftsdwarfs.
By turning on different labors*, they can accomplish and eventually be trained in any skill, or used as-is as an unskilled, no-attribute hauler. They are often trained for military purposes.
(* This can be done a variety of ways. v, p, l being one of the more common.)
