A pit trap is basically a drowning chamber without the water, non-reusable and lacking the hassle of complex mechanical constructions. Dig a hole leading into your fortress, flank both sides with bridges, and go off to do more dwarvish things. In the event of an attack, direct the invaders through it with the same pathing trick as above, and then raise the gates to trap them inside, potentially forever. The chamber can then be mined out to your gladiator arena, channelled into as organic waste disposal, or just left as is (although this is very undwarfish).

With a long enough tunnel and some compartmentalization, you can even turn it into a creature fighting arena by creating a second entrance in between the two bridges, and placing another bridge there. Megabeast goes in, gets trapped in the second section, goblin invaders go in, get trapped in the first section, and then the middle bridge is lowered and much fun is had.
