The farming (fields) labor enables a dwarf to work at a farm plot to fertilize them with potash and/or plant seeds which will then grow into harvestable plants. If your standing orders are configured to "Dwarves all harvest", then all dwarves will harvest plants, otherwise only dwarves with this labor enabled will participate.
