Toughness?
I've been trying out the "gym" in my current fortress, and a couple of dwarves seem to have leapt out ahead of the others in how quickly they've trained. I haven't confirmed it, but it looks to me like there might be a correlation between toughness and Pump Operator skill gains. Ability to pump more before getting tired? Faster recovery?
