I've not had problems due to exhaustion crossing channels as a legendary swimmer with superhuman endurance, even at maximum-speed swim.  I suppose a large enough body of water would eventually take days to cross, and so a non-vampire/necromancer/zombie might eventually collapse from being too drowsy, though I'm curious to see how far one actually has to go to reach that limit.  In truth, the biggest challenge I've faced swimming across large bodies of water is instant death via ice-entombment.
