The captured creatures page indicates that I can disarm captured goblins by locating narrow gear that's being worn on the stocks page and marking it for dumping. The numbers and colours do indeed mean quite a few different things - the first, grey, number is basically items normally, freely available to you (though e.g. including used (that is, filled) bins and barrels, worn and owned clothes (you can't control at all) and the occasional bolt in a river or on top of a tree you can't actually reach).
