Stoneworker is one of the professions. Stoneworkers work, unsurprisingly, with stone.

An adult dwarf whose best skill is in this category and who has at least one other skill in this category whose level is more than half the level of the highest skill will be known as a "Stoneworker", otherwise they will be known by the highest skill alone.

For example, a dwarf who is a Talented (6) Engraver and a Competent (3) Mason will be known as an Engraver but will become a "Stoneworker" once Mason reaches Skilled (4).
