(known guilds from string dump - rangers, fishers, farmers, and engineers seem to not be included)

If your dwarves are not given enough work to do, particularly after the [[economy]] has activated, they may request a meeting with your [[Manager]] to complain about the lack of work. Once enough complaints are received, the Manager will then meet with the [[Mayor]]. Sometimes, this results in the message "(Name), Mayor has taken a request from the (Profession) Guild.", often followed by "(Name), Mayor has mandated that certain jobs be completed.", resulting in a [[mandate]] that simply requires a number of jobs involving the stated profession to be completed (such as mining out 1 tile for each Miners Guild job).
Afterwards, the little bastard will have "Complete (Profession) Guild Jobs (x/y)" in his mandates. You must now have your dwarves fulfil x jobs using the profession of the guild.

Guilds currently exist for miners, carpenters, masons, metalsmiths, jewelers, and craftsmen.

Each guild has its own wage rate - if circumstances result in guild members being chronically unemployed, the Mayor may temporarily boost their wages to compensate, giving the message "(Name), Mayor has changed the guild wages."
