Chitin is a valuable material of an insects carapace, much like the shell of a lobster. It's main supply is from butchered Giant cave spiders and giant desert scorpions, or more realistically from caravan. Your dwarves can process it as leather. It has a material multiplier of x10, among the higher, on a par with unicorn leather.
