The Fishery allows you to process raw fish into fish meat and bones, extract items from the fish, and capture and keep live fish until needed later or as a pet. Currently fish extracts have little use.

Caught fish will first be moved to your food stockpile where, oddly enough, it doesn't decay (or at least at a much slower rate than in any other place). The Fishery does not automatically prepare the fish. Once you have some raw fish, queue the task with repeat orders. If you have enough fisherdwarves out, this may go for a long time; but sooner or later you will run out of raw fish and the repeat order will be canceled.

Should you forget to reassign the task, you will eventually have an abundance of useless raw fish filling up your larder. Once you have the Manager noble, you can queue up lots of 30-"process raw fish" jobs on the manager screen, helping to alleviate the problem.
