Toughness
The undead are really tough, they will very likely never die to barehanded combat, and early forts will crumble to even a undead fox, bring a slicing weapon of some sort if you expect to fight undead.
Impossible?
Contrary to the above post, even with a slicing weapon you can't destroy undead. Zombies, though, they die quickly and easily. Skeletons you can pound on with a steel battle axe until you get over-exerted, all their limbs have red wounds and they're pretty much useless, but they still won't die. Hopefully this gets fixed in the next patch.
Skeletons are supposed to be walking masses of bones held together by rotten tendons, ligaments and such. Reports indicate an adventurer hacked at a skeletal groundhog for numerous combat rounds but never broke off any limbs; The best he got was to knock a tooth out, and of course that didn't slow it down at all.
So until this gets fixed, you should avoid evil biomes like the plague when choosing a fortress site, particularly in view of the fact that ALL undead creatures get the building destroyer 1 tag added to them so they can break down doors and the like.
