A carpenter's workshop may be built out of any building material. It is used for constructing wooden objects such as furniture (except statues) and blocks. Beds can only be made at a carpenter's workshop.
While it seems from the q menu that it is possible to create wooden weapons, they aren't weapons. They are weapon racks. This becomes visible when expanding the menu via tab.
Animal traps will not be made by your carpenter but by a dwarf with trapping enabled.
