Quests, or "Agreements", are tasks in adventurer mode that your adventurer receives and is expected to complete that go into your Agreements list in your Quest log when you ask your military commander about "duty or advice pertaining to service as a hearthperson/lieutenant". Quests can also refer to more self-directed "quests" like chasing after rumors, by questioning individuals about their troubles or by asking after specific rumors.
Agreements
Though the standard quests of olde have been replaced with a more robust rumors system, "true" quests with objectives that need to be completed still exist in the form of agreements. If you are a hearthperson or any other kind of subordinate to a lord or, for example, a bandit leader, you can now "Request duty or advice pertaining to service as a hearthperson/lieutenant", these include agreements to kill bandits, beasts, and night creatures or to even cause problems for opposing factions. You can also be tasked to reunite families and rescue people, and kids that are rescued this way may be adopted or put up to adoption.
Once you complete it, talk to your superior and tell them about the fact that you completed it. The option to request a service will be replaced with the option to report your success or to report the status of your agreement. Reporting your status before you complete the agreement will get you a "I am confident in your abilities" message.
If you complete these tasks successfully, you will build up a reputation as a loyal soldier or even a hero, or a defender of the helpless depending on the agreement.
You can check the status of your various quests/agreements by pressing "Q" for quest log and scrolling to "Agreements"
