Marble, being a metamorphic rock, is of little interest to the average dwarf, since metamorphic rocks only contain ores of copper, lead, zinc and lower quality ores of silver. However, what makes marble more valuable then your average metamorphic rock, is the fact that it can be used as a flux for making steel. In real life marble is usually considered valuable, but in Dwarf Fortress it is no more valuable than any other normal rock.
