Sturgeons aren't very common in adventure mode, but when you do see one you'll want to stay well away from it. Sturgeons are massive and can tear off limbs and cause fatal injuries very easily due to their size. Most adventurers also will not be able to match the sturgeon's speed while in the water. The best way to deal with sturgeons is to stay as far away from them as possible. If you must fight them, attempt to cripple their mouth and tail as these are their weapons.
