Ash is created from a wood log at a wood furnace by a dwarf with the wood burning labor enabled. Ash is an intermediate good, used to make potash, lye, and for glazing ceramics.
Ash comes in bars, and as such it is stored in a bar/block stockpile and viewable in the stocks screen under "bars". It can also be used for most things other bars can, such as building constructions, workshops and furnaces. It is to be noted that, since both regular and magma-powered furnaces can be built out of ash bars, this is considered in-game as a fire- and magma-safe material.
Titans, forgotten beasts, and demons are occasionally made of ash, though killing them will usually just result in a pile of ash powder for your dwarves to clean up.
