Thrones (or chairs, when made of wood) are used to create offices for nobles. They are also used in dining rooms -- you must have one throne per table, to allow dwarves to sit while they eat. More than one throne per table is not recommended, as dwarves will complain about "not enough tables". There is NO advantage to making thrones out of wood: stone is far more abundant* and all furniture functions the same regardless of its material.
Also, the 'Seat' build option will allow you to place any item that is primarily designed to be sat upon. This currently is for only thrones and chairs.
