There are generally four categories of plants:
Crops can be planted and grown in farms. Shrubs cannot be planted, and must be gathered from naturally-growing specimens. Trees are not farmable, and grow multiple z-levels, providing wood and possibly fruit. Grasses form the natural ground cover of soil and muddied rock, and are necessary to feed grazing animals.
Plants may have multiple different types of growths. Each growth can have different properties as far as usages and edibility. Some examples:
