Most of these can be changed in the in game settings, with the current settings stored in the file prefs/d_init.txt, and the default settings with an explanation of each at data/init/d_init_default.txt; the location of the prefs folder depends on the portable mode setting (there is also a data folder there, but if you put data/init/d_init_default.txt it will not be read). Changes made directly to these files take effect the next time Dwarf Fortress is run, and apply to all worlds. Files in both data/init/ and prefs/ are read when Dwarf Fortress starts, in that order, with the last value read for an option being used.
