A milker is a dwarf that will milk creatures. Currentlyv0.28.181.40d, the only milkable creatures are purring maggots, though civilizations seem to milk other creatures off-screen (and trade the milk with you).
Unless you embark on a suitable chasm, milkers tend to be glorified peasants. Suggested tasks include:
