Deer are skittish forest animals, that in this game version are exactly the size of a dog and are fairly weak in combat. Yet, they can kill your hunter if he doesn't have armor and tries to melee two of them. A war dog can kill a deer one-on-one, but will likely be killed by the herd. As ever, combat in DF is highly random - there are no hard-and-fast rules as to the outcome of a given matchup.
When captured, they can be tamed and made into cheap pets, and are fairly uninteresting in every way. When butchered, they yield an amount of products comparable to that from a dog.
