Butchers do the dirty job of processing animal corpses and body parts for meat, fat, skin, bones, and a skull at the butcher's shop. With higher skill butchers will process corpses (from hunted animals) faster.
Capture a live land animal -task requires somebody with a trapper-skill enabled and a animal trap.
Creatures with the [BUTCHERABLE_NONSTANDARD] flag must be tamed and then designated for slaughter at the stocks screen in order to be butchered.
Creatures with the [NOT_BUTCHERABLE] flag cannot be butchered by any means. This flag is set for most (if not all) humanoids and some other creatures.
