Stone Carver is the skill associated with the Stone Carving labor. Stone carvers are responsible for creating furniture and other objects out of stone in a stoneworker's workshop.
As stone is plentiful and not terribly valuable, it's probably not worth making a work detail for your stone carvers; however, it's still worth bringing one on embark, as they can make the tables, chairs, and doors you want quickly. Graphically, stone carvers will wear all white clothes.
Note that carvers are distinct from Stonecrafters, who instead work at a craftdwarf's workshop and create smaller, generally handheld, items out of stone.
