Alligators are intimidating beasts found in temperate and tropical fresh waters. They are not tremendously aggressive, and will only attack dwarves who venture foolishly close.

Alligator derived products are worth three times as much as products from boring domestic animals, and alligators are large enough to provide a lot of products.

Unless you acquire them in trade with Elves, alligators cannot be tamed or bred and you must rely on the small groups of one to three alligators that show up occasionally to feed your meat industry, until the dungeon master arrives.
